The char siew at char (the restaurant is simply amazing). Today I decided to have this for the family dinner and this is really the best melt-in-your-mouth char siew that I have had so far. it is nice, moist, with lots of fatty bits smothered in a black gooey sauce. The siew yuk, must be ordered in advance. The char siew is made from pork belly that has been cooked 4 times over a period of 2 day to and if you look closely at the meat, it looks like the fat has been transformed into some kind of jelly, that melts on your bite. It reminds me of Roast Paradize at paya lebar. Just superb.
